Gart Properties LLC leases former Taco Bell space to new chicken restaurant concept
Denver, Colorado October, 2012 –
Yellowbelly, a quick, casual chicken restaurant, will open in early November in the former Taco Bell space at 2161 North Frontage Road West in West Vail.
“Our focus will be rotisserie and fried chicken with fresh side dishes”, said owner Barry Davis. “We like this location because it is visible from I-70 and has easy access for locals as well as vacationers and those traveling through. The space is the right size for dining in and take out.”
Davis has been in the hospitality business for the past 20 years, most recently as the manager for Bol in Vail Village where he worked with Chef Eric Wuppermann. Davis and Wuppermann teamed up with Michael Friedberg, an entrepreneur and former member of the USA National Ski Team. About a year ago they had the idea to create a new and creative chicken restaurant. “There are many variations on the pizza and burger theme and we wanted to bring some fresh and creative ideas to the chicken concept”, said Davis. What to name this new restaurant? They started brainstorming names and came up with Yellowbelly because it was a slang term for chicken in another sense and memorable, and as Davis said, “You can’t say Yellowbelly without smiling!” He added, “We will be using as much Colorado product as possible, our batter will be gluten free, and we’ll have a full complement of beer and wine choices.” Yellowbelly will be open every day for lunch and dinner.
The lease term for the 1,687 square foot space is for five years. The tenant was represented by Craig Cohn with Solaris Development.
